Hello Everyone! I decided to try another new recipe and it came out great! The Fruit Cocktail Cake was very easy to make. It reminded me a lot of a peach cobbler (without the spice toppings).

Since there were a bunch of fruits inside the cake I paired it with Twinings Chai Spiced Apple and it seemed like the perfect tea to drink with it. I don’t remember having this tea before, but I think I will be buying more. Yum yum. Add that to one of my Grandma’s Lynn’s teacup and you have a happy me! Happy 16 days until Christmas. Enjoy!

Fruit Cocktail Cake:
2 cups all-purpose flour
2 cups fruit cocktail, drained
1 3/4 cups sugar
1/2 cup butter (1 stick), melted
2 eggs
2 teaspoons baking soda
1/2 teaspoon salt
1. Preheat oven to 350 degrees. Spray 13×9 inch baking pan with nonstick cooking spray.
2. Combine flour, sugar, butter, eggs, baking soda and salt in large bowl; mix well. Fold in fruit cocktail. Spread batter in prepared pan.
3. Bake 40 minutes or until toothpick inserted into center comes out clean. Cool completely in pan on wire rack.
