Well folks, I’m baking in preparation of Countdown to Christmas. You know, since I’m stuck at home anyways…and I failed. I failed big. In fact I had to throw away the whole Zucchini Orange Bread.

I’ve never baked it before, but I happened to have all the ingredients so decided to give it a try. It called for a muffin mix but the mix had a different baking degree and time than the recipe. I decided to follow the recipe. First mistake.

I put it in the oven for 40 minutes as suggested. It was still doughy so I added 10 minutes. Still wasn’t finished but I’m watching an infant while working and baking. So I turn off the oven but keep the bread inside in hopes that it keeps cooking. Second mistake.

Well it doesn’t cook enough, so I thought maybe I could cut it into slices and put it back in the oven to finish baking. Ten minutes on one side. Ten minutes on the other side. That’ll do it! Wah-la! Third mistake.
Definitely not wah-la. 🤦 Still doughy. Not even close to being safe to eat. So it did not make the cut… For Countdown to Christmas. Here’s the recipe incase y’all want to learn from my mistakes and try it yourself 😂
Zucchini Orange Bread:
1 package cranberry orange mix
1 1/2 cups shredded zucchini
1 cup water
1 teaspoon ground cinnamon
1 teaspoon grated orange peel
Basically preheat the oven to whatever the muffin mix says or 350 degrees. Spray 8×4 inch loaf pan. Throw all those ingredients together and mix it. Pour into pan. Bake longer than 40 minutes (because it ain’t gonna work y’all). Make sure that toothpick comes out clean.
