Hello Everyone! I hope you had a wonderful Christmas! And happy beginning of Kwanzaa! I decided to write a bonus Christmas blog. The day after Christmas I do some Christmas sale shopping in preparation for next year and relax while enjoying leftovers. Today’s Bread Pudding recipe is perfect if you have bread leftovers you want to get rid of.

My tip for this recipe is if you want it more like a pudding use less bread, but if you’re like me you’ll want more bread because it’s delicious 😉 I also suggest using harder bread. For me that comes in the form of bread on the verge of becoming stale. Waste not.
I enjoyed Rooibos Chai from Harney and Sons in a Disney Christmas mug with my bread pudding this morning. Yum yum 😊

Bread Pudding
2 cups milk
2/3 cup sugar
2 eggs
1 teaspoon vanilla extract
2 tablespoons butter, melted
1-2 cups bread crumbs
Cinnamon to sprinkle on top
1.) Preheat the oven to 350 degrees.
2.) Mix the milk, sugar, eggs, vanilla extract, and melted butter in the small – medium size oven safe dish you plan to use. (I would suggest not going bigger than 8×8. I use a circle dish about 6 inches in circumference.)
3.) Put the bread crumbs into the mixture and use a spoon to saturate all the bread and push it below the liquid surface.
4.) Evenly sprinkle the top with cinnamon.
5.) Bake about 40 minutes or until knife comes out clean.
